Massaman Slow Cooked Beef Curry

1 Brown Onion, diced

5cm piece Ginger, sliced
1 stalk Lemongrass, sliced

1/8 tsp Nutmeg
1/2 tsp Cinnamon
2 Cloves
1/4 Cardamom
2 Tbsp Fish Sauce
1 tsp Brown Sugar
1 can Coconut Milk
2-3 Kumara, peeled and diced
