Roasted Kumara with EVOO and Date Glaze

Kumara is the best roasted vegetable to marry sweet flavours with. By adding Lupi Extra Virgin Olive Oil, the sweet and savoury become a beautiful dish to serve.

PRE TIME : 1 hour
SERVINGS 3-4 people

 3-4 medium sized Kumara
 1 cup dried Dates
  1 cup Boiling Water
 1 tsp Salt

RECIPE INSTRUCTIONS

Preheat the oven to 180ºC. Wash and dice the Kumara into your desired sized pieces. Roast in the oven until cooked and slightly crispy.

While the Kumara is cooking, pour the water over the dates and let them soak for 20 minutes. Tip off any water that is left, but keep to use later. Put the dates into a food processor or blender then add the Lupi Extra Virgin Olive Oil and salt. Blend until a smooth glaze has formed. If the glaze is too thick, add some of the saved water.

Pour the glaze over the hot Kumara and stir. Serve!
