Roasted Kumara with EVOO and Date Glaze

 3-4 medium sized Kumara
 1 cup dried Dates
  1 cup Boiling Water
 1/3 cup Lupi Extra Virgin Olive Oil
 1 tsp Salt

Preheat the oven to 180ÂșC. Wash and dice the Kumara into your desired sized pieces. Roast in the oven until cooked and slightly crispy.


While the Kumara is cooking, pour the water over the dates and let them soak for 20 minutes. Tip off any water that is left, but keep to use later. Put the dates into a food processor or blender then add the Lupi Extra Virgin Olive Oil and salt. Blend until a smooth glaze has formed. If the glaze is too thick, add some of the saved water.


Pour the glaze over the hot Kumara and stir. Serve!
