Seafood Paella

Food is for sharing and this Kiwi Seafood Paella is one recipe you need to put on your summer menu. Using Lupi Extra Virgin Olive Oil, this dish is a wonderful combination of what a true Kiwi summer is.

1L Fish Stock
1 large tsp Saffron Threads
2 large tsp Smoked Paprika
2 tsp Turmeric
4 Tbsp Lupi Extra Virgin Olive Oil
1 large Onion, finely chopped
4 Garlic Cloves, finely chopped
1 Chorizo Sausage, sliced
2 cups Arborio Rice
2 large Tomatoes, diced
1 Red Capsicum, diced
500g Hoki (or your catch of the day!), in large bite-sized pieces
500g Mussels, in shell
500g Cockles, in shell
1 cup White Wine
100g Frozen Peas, defrosted
1/2 bunch Fresh Parsley, leaves torn
