Lamb, Haloumi and Tomato Skewers

Need something really tasty but quick to make? These Lamb, Haloumi and Tomato Skewers are great for a meal, or serve them up as a pre-dinner nibble.

PREP TIME 20 minutes
SERVINGS 16-18 small skewers

 300g Diced Lamb
 180g Haloumi Cheese
 20 Cherry Tomatoes
 1/4 cup Lupi Extra Virgin Olive Oil
 2 tsp ground Cumin
 4 tsp Paprika
 1 1/2 tsp ground Coriander
 1/4 tsp Cayenne Pepper
 1 tsp ground Turmeric
 1 tsp Minced Garlic Skewer Sticks

RECIPE INSTRUCTIONS

Mix the oil, coriander, cumin, paprika, cayenne pepper, turmeric and garlic together in a bowl until combined. Add the lamb and stir to cover. Sit aside to marinate while preparing the other ingredients.

Dice the haloumi cheese into similar size squares as the lamb. Using the skewers, thread the lamb, haloumi and tomato onto each skewer alternatively. Keep going until all the lamb is used.

Fry the skewers in a fry-pan or on the BBQ until just cooked. Serve.
