Hot Water Chocolate Cake

Fancy a light but extra tasty chocolate cake? Well this is the perfect recipe. Not only does this cake mix make a really large cake, it can also be used to make smaller muffins and freeze for school lunches. Lupi Special Selection Delicate Extra Virgin Olive Oil keeps this cake mix very moist however you decide to use it.

2 cups Flour
2 cups Sugar
¾ cup Cocoa Powder
2 tsp Baking Powder
1½ tsp Baking Soda
1 tsp Salt
1 tsp Instant Coffee
1 cup Milk
½ cup Lupi Special Selection Delicate Extra Virgin Olive Oil
2 Eggs
2 tsp Vanilla Extract
1 cup Boiling Water
Chocolate Buttercream or Icing Sugar

NOTE: This mixture can be used for making cup cakes or muffins. Just cook for less time.
