Baked Whole Snapper

Snapper are running at the moment, and fresh fish is always a treat, however, a lot of the flesh is wasted when we fillet. This recipe allows for the whole fish to be cooked, making for full and happy family meal-times, plus if you are limiting your indulgences over Lent you need not miss out.

Baked Whole Snapper

Whole Snapper, gutted and scaled
1 Lemongrass Stalk
1 2cm piece Fresh Ginger
8 Peppercorns
1/2 cup Lupi Extra Virgin Olive Oil
2 Limes
