Fanouropita Cake

This Greek cake is named after St Fanourios who was known for finding lost things. A succulent, soft cake with a hint of spice, walnuts and of course, Lupi Extra Virgin Olive Oil.

SERVINGS 12-16 people

 1 1/2 cups Orange Juice
 2 Tbsp Brandy
 1 cup Sugar
 1/2 cup Brown Sugar
 5 1/2 cups Flour
 1 tsp Baking Soda
 2 tsp Baking Powder
 1 tsp Ground Cinnamon
 1/2 tsp Ground Cloves
 1 1/4 cups Chopped Walnuts and/or Pecans
 1/2 cup Craisins
 1/2 cup Raisins
 2 Tbsp Sesame Seeds (or Hemp Seeds)

RECIPE INSTRUCTIONS

Preheat oven to 175ºC. Line a spring-form cake tin.

Mix the olive oil, orange juice, and brandy together in a large bowl. Sieve in the flour, baking soda, baking powder, cinnamon and cloves and stir to combine. Add the walnuts, craisins and raisins and stir until just mixed through. Pour into the tin and sprinkle the sesame seeds on top.

Bake for 50-60 minutes until cooked.
