Creamy Bacon and Mushroom Penne

Serves 4

 400g penne pasta
 4 rashers of bacon, chopped
 200g button mushrooms, sliced
 2 cloves garlic, crushed
 250g cream cheese
 4 spring onions, thinly sliced, plus extra to garnish
 2 tbsp grated Parmigiano, plus extra to serve
 Freshly cracked black pepper

RECIPE INSTRUCTIONS

Cook pasta according to packet instructions, drain reserving some of the pasta cooking
water.

Heat Lupi Organic Extra Virgin Olive Oil in a large frypan, add bacon, mushrooms and garlic
and fry until mushrooms soften. Add the cream cheese, spring onion, Parmigiano, season
with pepper, then allow to simmer, stirring, for 2-3 mins. Add a splash of reserved pasta
water and stir to loosen sauce.

Add drained pasta and toss to coat. Serve with extra Parmigiano, spring onions and cracked black pepper.
