Christmas Crinkle Cookies

Christmas time is baking time. Brown sugar, ginger and cinnamon give these fun cookies just the right about of spice.

PRE TIME : 30 minute plus chilling time
SERVINGS 12-16 cookies

 1 Egg
 1/2 cup Brown Sugar
 1 1/4 cups Flour
 1/2 tsp Baking Powder
 2 tsp Ground Ginger
 1 tsp Ground Cinnamon
 1/4 cup Icing Sugar

RECIPE INSTRUCTIONS

In a mixing bowl, whip the egg and brown sugar together until creamy. Gradually pour in the oil as you whip the egg mixture. Sift in the flour, baking powder, ginger and cinnamon and stir until combined. Cover and place in the fridge for 1 hour.

Preheat oven to 160ºC. Line a baking tray with baking paper. Roll the chilled dough into dessert spoon sized balls and roll each ball in the icing sugar so that its completely covered. Place on the tray evenly spaced. Cook for 10 minutes. Rest for 10 minutes. Store in an airtight container.
