This wonderfully coloured Pomegranate Salad Dressing will make any salad pop! Using Lupi Extra Virgin Olive Oil, everyone will be asking you for the recipe this summer salad season.

RECIPE INSTRUCTIONS
Put all of the ingredients into a bullet blender. Blender until all the seeds have been blended and the mixture has lightened in colour. Use on your favourite salad and sprinkle a few pomegranate seeds on top for decoration.
Store in the fridge for 3-4 days.
NOTE: To easily remove the seeds, slice through the skin horizontally until connected. Break into two parts. Pull each arm out slightly to loosen the seeds. Using a wooden spoon, bang the bottom of the fruit over a bowl. As the seeds fall, continue to bang and loosen the seeds by squeezing the skin. Continue until all of the seeds have fallen out.
