Olive Oil and Lime Kiwi Summer Slushy

 1 cup Caster Sugar
 2 1/2 cups Water
 6-7 large Limes
 1 Tbsp Lupi Extra Virgin ORGANIC Olive Oil
 6 Kiwifruit, peeled and cut into bite sized pieces
 1/2 fresh Pineapple, trimmed and cut into bite sized pieces
 1 Mango, cut into cubes

Bring the sugar and water to a simmer in a pot. Stir until the sugar is dissolved. Grate the rind from 2 limes and add to the liquid. Set aside to cool.

Juice the limes. Add the lime juice and Lupi Extra Virgin ORGANIC Olive Oil to the sugar mixture and stir. Pour into a shallow dish and freeze for 3-4 hours.

Every 30 minutes break up the freezing mixture with a fork until you have a slushy texture. Divide the fruit into serving bowls and evenly share the ice mixture. Serve!
