Lupi Extra Virgin Olive Oil Horopito and Basil Pesto

Pesto is an easy way to add flavour to your cheeseboard or create an entire meal by stirring thru pasta. This pesto has so much flavour with the earthiness of Lupi Extra Virgin Olive Oil and the spiciness of the horopito, your tastebuds will thank you!


1 cup fresh Basil Leaves, packed
1 cup fresh Spinach Leaves, packed
1/2 cup freshly grated Parmesan Cheese
1/2 cup Lupi Extra Virgin Olive Oil
1/3 cup Pine Nuts (or peanuts)
3-4 Peeled Garlic Cloves
1/4 tsp Salt, more to taste
1/4 tsp freshly ground Black Pepper, more to taste
1 tsp dried Horopito (or 1/8 cup fresh)
