Apple and Cardamom Cake

This moist, light cake makes for a perfect and decadent afternoon tea. You could also slightly warm it and serve with yoghurt. Yum!

1/4 tsp Cardamom Seeds
1 2/3 cups Sugar
4 large Eggs
2 Egg Yolks
1/2 tsp Salt
1 Orange, zested
2 tsp Vanilla Extract
1 cup Lupi Extra Virgin Olive Oil
2 1/3 cups Flour
1 Tbsp Baking Powder
3 Apples, peeled and diced
