Pomegranate, Manuka Honey & Olive Oil Dressing

 1 Pomegranate, seeds removed
 1/2 cup Lupi Extra Virgin Olive Oil
 1/4 cup Manuka Honey
 1 Tbsp Lemon Juice
 1 tsp Dried Kawa Kawa or 1 fresh Kawa Kawa leaf
 1/2 tsp Pink Himalayan Salt

Put all of the ingredients into a bullet blender. Blender until all the seeds have been blended and the mixture has lightened in colour. Use on your favourite salad and sprinkle a few pomegranate seeds on top for decoration.

Store in the fridge for 3-4 days.

NOTE: To easily remove the seeds, slice through the skin horizontally until connected. Break into two parts. Pull each arm out slightly to loosen the seeds. Using a wooden spoon, bang the bottom of the fruit over a bowl. As the seeds fall, continue to bang and loosen the seeds by squeezing the skin. Continue until all of the seeds have fallen out.
