Finely dice the garlic, rosemary, thyme, capers, black pepper and parmesan cheese until the ingredients start to stick together when combined. You can decide how chunky you want to dip to be. Press into a ramekin to shape and then tip out onto a small plate. Cover with half of the olive oil and serve the rest of the oil near so that it can be added as needed.
