Olive Oil & Balsamic Semi-Dried Tomatoes

 5 Truss Tomatoes
 1/4 cup Lupi Extra Virgin Olive Oil
 1/4 cup Lupi Balsamic Vinegar
 A generous grind of Salt and Pepper

Preheat your oven to 120°C. Line a baking tray large enough to hold all of the tomatoes when cut.

Cut the tomatoes into quarters and spread on the baking tray. Drizzle the vinegar and oil over all of the tomatoes and grind salt and pepper over them. Cook in the oven for 2-3 hours, turning the tomatoes every hour.

Add to your favourite pasta dish or serve on a cheese board.
