Calzone with Rocket, Salami & Cheese

 3/4 cup Warm Water
 2 tsp Dried Yeast (7g)
 2 tsp Caster Sugar
 2 1/2 cups Plain Flour
 1 tsp Salt
 1/3 cup Lupi Extra Virgin Olive Oil
 Salami
 1 cup Pizza Cheese
 30g Rocket Leaves
 1/2 Lemon, for the juice
 Freshly Ground Black Pepper

Combine the water, yeast and sugar in a bowl. Set aside for 5-10 minutes until the yeast starts to activate. In a large bowl, combine the flour and salt and make a well in the middle. Add the yeast mixture and half of the oil. Stir with a knife until a dough is formed and continue to knead for 10 minutes. Set aside in an oiled bowl and cover with a tea towel. Leave for 30 minutes.

Preheat the oven to 230ºC. Line a baking tray with baking paper. Divide the dough into 4 even pieces. Roll each on out into a circle and place on the tray. Layer one half of each circle with the salami and cheese and fold the dough over top but don’t seal. Brush the rest of the oil on top and bake for 15 minutes.

Combine the rocket, lemon juice and a good grind of pepper in a small bowl. Fill the calzones with the rocket and serve.
