Green Pea & Mint Risotto

The combination of peas and mint, along with lemon zest and ricotta cheese turn this simple risotto into a delicious dish to impress family and friends.

1 bunch parsley
1 bunch mint
1 small onion or 3 shallots, finely chopped
2 Tbsp butter
1 cup Arborio rice
3 cups chicken stock
1 1/2 cups frozen peas
4 Tbsp Lupi Extra Light Olive Oil
1/3 cup Parmesan cheese, grated
120g ricotta cheese
grated zest of a lemon
